Yesterday was the first snow for NYC, and it was quite magical. I watched from the window as the snow slowly coated the cars and ground. As I watched people slowly file out of their apartments to defrost or scrape their windows, I realized that winter was indeed here.
Thanks December!
December always means more time inside, and by that, I mean like a few days at a time, might get cabin fever, more time inside. It’s still new to me, and I am not sure I will ever get used to it. I mean, yes, New York is romantical AF in December, even as a single woman. The lights are different, the sounds are louder (in a good way), the smells are sweeter, and the people seem happier. Unless you live here, then it is a transportation hell. But, we New Yorkers persist, with the help of ramen and rum.
Have you ever doubled up on the Bok Choy in your ramen?
Bok choy has become one of my favorites since moving. You can make a stir fry and toss it with some mushrooms or steam some and add it to a soup. You will know it’s ready when the leaves are slightly wilted and the stalks crunchy. Toss on some soy sauce, and rice vinegar and boom, a nutritionally dense salad served.
Bok choy is in the cruciferous vegetable family, similar to brussel sprouts, broccoli, kale, and spinach. These veggies contain powerful antioxidants and are high in vitamins C, E, and K, aiding in the growth and strengthening of your hair, skin, and nails. These deep green veggies also help maintain a healthy heart and digestive system! But these aren’t the only heavy hitters when it comes to December Produce.
This month I will be using many of these veggies for the Tribe Cleanse, incorporating juices and clean meals for a kick start to the new year. I am also linking up with Sentient Wellness to get some of those holiday drink recipes to you all as well. Nothing helps a winter like some Holiday Spirits, rum and gin to be precise!
