It’s National Peach Cobbler Day!!
Growing up peach cobbler was always the dessert option for barbeques or dinners, and so I assumed the recipe was something super complex. It turns out, peach cobbler runs in the vegetarian realm, to begin with, so this recipe was not too hard. The easiest method I’ve seen lists simply peaches, sugar, flour, and butter.
This recipe was tested both ways vegan and non-vegan. Both were amazing, but the vegan one seemed to be the favorite. I made both versions with the same measurements, using dairy and gluten-free ingredients for the vegan option.
So, whether you are trying to celebrate National Peach Cobbler day (April 13th!!) or need a simple sweet dessert for dinner, this one is what you should do:
Preheat the oven to 400. Mix the left column ingredients in a bowl and add to a greased glass pan and set in oven for 10 minutes. Next, mix the butter, sugar, vanilla, ad milk until blended. Toss in your dry ingredients and mix until you have a cookie-like consistency. Throw dollops of your dough onto the peaches and bake for another 15 minutes or until golden brown. I did toss a little sugar on top for the last 5 minutes of baking, for fun though.
